I like beef and barley soup with lots of vegetables, especially on a really cold day. Barley is something that I only used once or twice a year but because it was something I couldn't find here in La Ceiba, I was really craving it.
On my last trip to SuperMega, I found a box of barley! It's amazing how such a simple thing can give you so much pleasure. I don't know if it has anything to do with CAFTA or not but I'm seeing lots of things we never had available here before. They even sell yellow corn meal now. Not yellow corn masa yet, but who knows, maybe some day.
Yesterday wasn't exactly a cold day. ¡Al contrario! It was in the 90's with 89% humidity, but I made soup anyway. Just walking to the kitchen makes me break out in a sweat in this humidity so what difference does it make?
I used onions, garlic, potatoes, and carrots. And because I didn't have any other fresh vegetables, I threw in a can each of green beans, corn, and mushrooms. For seasonings, I used thyme, bay leaf, fresh cracked black pepper, beef bouillon, and marjoram. That's all I remember.
As you can see from the size of that pot, we'll be eating a lot of soup in the next few days. Yummy.
