As you can see, the two bantam egg yolks are a much deeper color than the grocery store egg. The yolks were almost as big as the grocery store yolk as well. The proportion of yolk to white was much higher. The two bantam eggs together measured less than 1/4 cup so if our chickens' eggs are the same size, it looks like it is going to be about a two to one ratio for recipes.
We fried them up along with a couple of normal eggs for comparison purposes. The results were conclusive. The bantam eggs unarguably had more flavor.
